In the mouth the tannin is gently rough, the acidity is well perceptible and announces a continuous improvement of the drink if the wine will be left in the bottle 2/3 years but losing over time those notes of freshness and crisp fruit.

Excellent with an appetizer of cured meats and fried gnocco or a plate of maccheroncini with fresh cherry tomatoes, eggplant and cacioricotta cheese. The distinct freshness makes it excellent with fatty main courses such as a braised beef cheek.
